Ingredients
- 2 lbs pork belly, cut into 2-inch pieces
- 1 cup coconut milk
- 1/2 cup soy sauce
- 1/4 cup white vinegar
- 1 head garlic, minced
- 1 onion, sliced
- 3 bay leaves
- 1 teaspoon whole peppercorns
- 2 tablespoons cooking oil
Instructions
- In a large bowl, marinate the pork belly with soy sauce, vinegar, garlic, and peppercorns for at least 30 minutes.
- In a large pot or Dutch oven, heat the cooking oil over medium heat. Add the marinated pork belly and cook until browned on all sides.
- Add the sliced onions and bay leaves, and sauté for 2-3 minutes until the onions are soft.
- Pour in the coconut milk and bring to a simmer. Cover and let it cook for 45 minutes to 1 hour, or until the pork is tender and the sauce has thickened.
