  • 1/4 cup of water
  • 1/4 cup of lime juice
  • 1/4 cup of cornstarch
  • 1/4 cup of water
  • 1/4 cup of sesame oil
  • 1/4 cup of soy sauce
  • 1/4 cup of honey
  • 1 tablespoon of grated ginger
  • 1 tablespoon of minced garlic
  • 1 tablespoon of sesame seeds

  • 1 pineapple, peeled, cored, and cut into chunks
  • 1 red bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks
  • 1/2 cup of coconut milk
  • 1/4 cup of chopped cilantro
  • 1 cup of coconut flakes
  • 1/2 cup of macadamia nuts, chopped
  • 1/2 cup of sugar
  • 1/4 cup of water
  • 1/4 cup of lime juice
  • 1/4 cup of cornstarch
  • 1/4 cup of water
  • 1/4 cup of sesame oil
  • 1/4 cup of soy sauce
  • 1/4 cup of honey
  • 1 tablespoon of grated ginger
  • 1 tablespoon of minced garlic
  • 1 tablespoon of sesame seeds
  • 1 tablespoon of chopped green onions
  • Salt and pepper to taste

Instructions

  • In a large bowl, combine the cubed pork shoulder, soy sauce, brown sugar, rice vinegar, pineapple juice, minced garlic, and chopped onion. Marinate for at least 1 hour, or overnight for best results.
  • Preheat the oven to 350 degrees F. Thread the marinated pork onto skewers and grill for 15-20 minutes, turning occasionally, until fully cooked and slightly charred.
  • In a large serving bowl, combine the cooked white rice, pineapple chunks, red and green bell peppers, coconut milk, chopped cilantro, coconut flakes, and chopped macadamia nuts. Mix well and set aside.
  • In a small saucepan, combine the sugar, water, and lime juice. Bring to a simmer over medium heat. In a separate bowl, mix the cornstarch and water to create a slurry. Slowly pour the slurry into the simmering sugar mixture, stirring constantly until thickened. Remove from heat and let cool to room temperature.
  • In a separate bowl, whisk together the sesame oil, soy sauce, honey, grated ginger, minced garlic, sesame seeds, and chopped green onions to create a glaze for the grilled pork skewers.
  • Arrange the grilled pork skewers on a serving platter and brush with the prepared glaze.
