  • 1/4 cup of water
  • 1/4 cup of sesame oil
  • 1/4 cup of soy sauce
  • 1/4 cup of honey
  • 1 tablespoon of grated ginger
  • 1 tablespoon of minced garlic
  • 1 tablespoon of sesame seeds
  • 1 tablespoon of chopped green onions
  • Salt and pepper to taste

Instructions

  • In a large bowl, combine the cubed pork shoulder, soy sauce, brown sugar, rice vinegar, pineapple juice, minced garlic, and chopped onion. Marinate for at least 1 hour, or overnight for best results.
  • Preheat the oven to 350 degrees F. Thread the marinated pork onto skewers and grill for 15-20 minutes, turning occasionally, until fully cooked and slightly charred.
  • In a large serving bowl, combine the cooked white rice, pineapple chunks, red and green bell peppers, coconut milk, chopped cilantro, coconut flakes, and chopped macadamia nuts. Mix well and set aside.
  • In a small saucepan, combine the sugar, water, and lime juice. Bring to a simmer over medium heat. In a separate bowl, mix the cornstarch and water to create a slurry. Slowly pour the slurry into the simmering sugar mixture, stirring constantly until thickened. Remove from heat and let cool to room temperature.
  • In a separate bowl, whisk together the sesame oil, soy sauce, honey, grated ginger, minced garlic, sesame seeds, and chopped green onions to create a glaze for the grilled pork skewers.
  • Arrange the grilled pork skewers on a serving platter and brush with the prepared glaze.
  • Serve the grilled pork skewers with the tropical rice salad and drizzle with the lime sauce. Enjoy your Polynesian feast!

The Polynesian Feast is a traditional culinary celebration that originated in the Polynesian islands of the South Pacific. This vibrant feast is a reflection of the rich cultural heritage of the Polynesian people, featuring an array of delicious dishes such as roasted pig, fresh seafood, tropical fruits, and taro. The feast is often prepared by skilled Polynesian chefs who infuse the dishes with a blend of indigenous flavors and cooking techniques. Today, the best versions of this feast can be experienced in Polynesian restaurants across the islands, where the authenticity of the dishes is preserved. The key to a successful Polynesian Feast lies in the careful preparation of the roasted pig, which is often cooked in an underground oven called an "imu" to achieve tender, flavorful meat. This traditional cooking method imparts a unique smoky essence to the dish, making it a standout feature of the feast. For those looking to recreate the Polynesian Feast at home, sourcing high-quality, fresh ingredients such as coconut, pineapple, and taro is essential to capturing the true essence of this vibrant culinary tradition.
