Instructions

  • Preheat the oven to 400°F (200°C).
  • In a food processor, combine 1 cup of shelled pistachios, 2 cups of fresh basil leaves, 3 cloves of garlic, and 1/2 cup of grated Parmesan cheese. Pulse until finely chopped.
  • With the food processor running, slowly pour in 1/2 cup of olive oil until the mixture is smooth. Season with salt and pepper to taste.
  • Place the salmon fillets on a baking sheet lined with parchment paper. Season with salt and pepper.
  • Spread a generous amount of the pistachio pesto on top of each salmon fillet, covering the entire surface.
  • Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
  • Serve the pistachio pesto salmon hot, garnished with additional chopped pistachios and fresh basil leaves if desired. Enjoy!
