Ingredients
- 4 salmon fillets (6 oz each)
- 1 cup shelled pistachios
- 2 cups fresh basil leaves
- 3 cloves garlic
- 1/2 cup grated Parmesan cheese
- 1/2 cup olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a food processor, combine 1 cup of shelled pistachios, 2 cups of fresh basil leaves, 3 cloves of garlic, and 1/2 cup of grated Parmesan cheese. Pulse until finely chopped.
- With the food processor running, slowly pour in 1/2 cup of olive oil until the mixture is smooth. Season with salt and pepper to taste.
- Place the salmon fillets on a baking sheet lined with parchment paper. Season with salt and pepper.
- Spread a generous amount of the pistachio pesto on top of each salmon fillet, covering the entire surface.
- Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
