  • 1 cup diced pineapple
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced green bell pepper
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1/2 cup frozen peas
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon vegetable oil
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste

  • 1/4 cup chopped green onions
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste

Instructions

  • Heat a large skillet or wok over medium-high heat. Add 1 tablespoon of vegetable oil.
  • Add the diced onion, red bell pepper, and green bell pepper to the skillet. Stir-fry for 2-3 minutes until the vegetables are slightly tender.
  • Push the vegetables to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until cooked through, then mix with the vegetables.
  • Add the minced garlic and frozen peas to the skillet. Stir-fry for another 1-2 minutes.
  • Add the cooled cooked rice to the skillet. Stir in the soy sauce and oyster sauce. Mix well to combine all the ingredients.
  • Add the diced pineapple to the skillet and stir-fry for an additional 2-3 minutes until the rice is heated through and the pineapple is slightly caramelized.
  • Season the fried rice with salt and pepper to taste. Stir in the chopped green onions and cilantro.
