Ingredients
- 3 cups cooked jasmine rice, cooled
- 1 cup diced pineapple
- 1/2 cup diced red bell pepper
- 1/2 cup diced green bell pepper
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1/2 cup frozen peas
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon vegetable oil
- 1/4 cup chopped green onions
- 1/4 cup chopped cilantro
- Salt and pepper to taste
Instructions
- Heat a large skillet or wok over medium-high heat. Add 1 tablespoon of vegetable oil.
- Add the diced onion, red bell pepper, and green bell pepper to the skillet. Stir-fry for 2-3 minutes until the vegetables are slightly tender.
- Push the vegetables to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until cooked through, then mix with the vegetables.
- Add the minced garlic and frozen peas to the skillet. Stir-fry for another 1-2 minutes.
- Add the cooled cooked rice to the skillet. Stir in the soy sauce and oyster sauce. Mix well to combine all the ingredients.
- Add the diced pineapple to the skillet and stir-fry for an additional 2-3 minutes until the rice is heated through and the pineapple is slightly caramelized.
- Season the fried rice with salt and pepper to taste. Stir in the chopped green onions and cilantro.
- Remove the skillet from the heat and transfer the pineapple fried rice to a serving dish. Enjoy!
