Instructions

  • In a small saucepan, combine 1 cup of pineapple juice, 1/4 cup of soy sauce, 1/4 cup of ketchup, 2 tablespoons of brown sugar, 2 cloves of minced garlic, 1 teaspoon of grated ginger, and 1/2 teaspoon of red pepper flakes. Bring to a simmer over medium heat and cook for 5-7 minutes, stirring occasionally, until the sauce thickens slightly.
  • In a small bowl, mix 1 tablespoon of cornstarch with 2 tablespoons of water to create a slurry. Slowly pour the slurry into the simmering sauce, stirring constantly, and cook for an additional 2-3 minutes until the sauce thickens to a glaze consistency. Remove from heat and set aside.
  • Season the chicken breasts with salt and pepper. Heat a grill or grill pan over medium-high heat. Grill the chicken for 5-6 minutes on each side, or until fully cooked and grill marks appear.
  • Brush the spicy pineapple glaze onto the grilled chicken breasts, coating both sides. Continue to cook for an additional 1-2 minutes on each side, allowing the glaze to caramelize and create a sticky coating on the chicken.
