Pineapple Chicken

Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup pineapple chunks
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 2 cloves garlic, minced
- 1 tablespoon cornstarch
- 1/4 cup water
- 2 tablespoons vegetable oil
- Salt and pepper to taste
- Sesame seeds and green onions for garnish
Instructions
- In a small bowl, mix together 1/4 cup soy sauce, 1/4 cup brown sugar, and 2 cloves of minced garlic. Set aside.
- Season the chicken breasts with salt and pepper on both sides.
- In a large skillet, heat 2 tablespoons of vegetable oil over medium-high heat. Add the chicken breasts and cook for 5-6 minutes on each side, or until golden brown and cooked through.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the pineapple chunks and cook for 2-3 minutes, until they start to caramelize.
- Return the chicken to the skillet with the pineapple.
- Pour the soy sauce mixture over the chicken and pineapple. Cook for 2-3 minutes, allowing the sauce to thicken and coat the chicken.
- In a small bowl, mix 1 tablespoon of cornstarch with 1/4 cup of water to create a slurry. Pour the slurry into the skillet and stir to combine, allowing the sauce to thicken further.
- Garnish with sesame seeds and chopped green onions.
- Serve the pineapple chicken over rice or with steamed vegetables. Enjoy!
