  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon honey
  • Salt and pepper to taste

Instructions

  • Rinse the quinoa under cold water using a fine-mesh strainer.
  • In a medium saucepan, bring 2 cups of water to a boil. Add 1 cup of quinoa and 1/2 teaspoon of salt. Reduce heat to low, cover, and simmer for 15 minutes, or until all the water is absorbed. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork and let it cool to room temperature.
  • In a large bowl, combine the cooked quinoa, diced pineapple, diced red bell pepper, chopped red onion, and chopped cilantro.
  • In a small bowl, whisk together the lime juice, olive oil, honey, salt, and pepper. Pour the dressing over the quinoa mixture and toss to combine.
  • Refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld.
  • Serve chilled and enjoy!
