  • Cook the whole wheat spaghetti according to package instructions. Drain and set aside.
  • In a food processor, combine 2 cups of fresh basil leaves, 3 cloves of garlic, 1/3 cup of pine nuts, and 1/2 cup of grated Parmesan cheese. Pulse until finely chopped.
  • With the food processor running, slowly pour in 1/2 cup of extra virgin olive oil until the mixture is smooth and well combined. Season with salt and pepper to taste.
  • In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side until pink and opaque. Season with salt and pepper.
  • Add the cooked whole wheat spaghetti to the skillet with the shrimp. Pour the pesto sauce over the pasta and shrimp, tossing to coat evenly. Cook for an additional 2-3 minutes until heated through.
