Ingredients
- 2 ripe avocados, sliced
- 4 medium tomatoes, sliced
- 1 pound fresh mozzarella cheese, sliced
- 1/2 cup fresh basil leaves
- 1/4 cup pine nuts
- 2 cloves garlic
- 1/2 cup extra virgin olive oil
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- In a food processor, combine 1/2 cup basil leaves, 1/4 cup pine nuts, and 2 cloves of garlic. Pulse until finely chopped.
- With the food processor running, slowly pour in 1/2 cup of extra virgin olive oil until the mixture is smooth and well combined.
- Add 1/2 cup of grated Parmesan cheese to the pesto and pulse until just combined. Season with salt and pepper to taste.
- On a large serving platter, arrange the sliced tomatoes, mozzarella, and avocado in an alternating pattern.
- Drizzle the prepared pesto over the arranged tomatoes, mozzarella, and avocado slices.
- Garnish with the remaining basil leaves and pine nuts.
- Serve immediately and enjoy!
