Ingredients
- 4 boneless, skinless chicken breasts
- 1/2 cup of pesto sauce
- 4 oz of goat cheese
- 2 cups of mixed vegetables (such as bell peppers, zucchini, and cherry tomatoes)
- 2 tablespoons of olive oil
- 1 teaspoon of Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Using a sharp knife, make a horizontal slit along the side of each chicken breast to create a pocket for stuffing.
- Spread 2 tablespoons of pesto inside each chicken breast, then stuff each with 1 oz of goat cheese. Season with salt and pepper.
- In a large bowl, toss the mixed vegetables with olive oil, Italian seasoning, salt, and pepper. Spread them on a baking sheet in a single layer.
- Place the stuffed chicken breasts on the same baking sheet with the vegetables.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender and slightly caramelized.
- Remove from the oven and let the chicken rest for 5 minutes before serving.
