Instructions

  • Preheat the oven to 375°F (190°C).
  • Using a sharp knife, make a horizontal slit along the side of each chicken breast to create a pocket for stuffing.
  • Spread 2 tablespoons of pesto inside each chicken breast, then stuff each with 1 oz of goat cheese. Season with salt and pepper.
  • In a large bowl, toss the mixed vegetables with olive oil, Italian seasoning, salt, and pepper. Spread them on a baking sheet in a single layer.
  • Place the stuffed chicken breasts on the same baking sheet with the vegetables.
  • Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender and slightly caramelized.
  • Remove from the oven and let the chicken rest for 5 minutes before serving.
