Instructions

  • In a large bowl, beat 6 eggs.
  • Add 1/2 cup chopped parsley, 1/2 cup chopped cilantro, 1/2 cup chopped dill, 1/2 cup chopped chives, 1/2 teaspoon turmeric, 1/2 teaspoon baking powder, and salt and pepper to taste. Mix well.
  • Heat 3 tablespoons of olive oil in a non-stick skillet over medium heat.
  • Pour the egg mixture into the skillet and spread it evenly. Cook for 5-7 minutes or until the bottom is golden brown.
  • Carefully flip the kuku using a large plate or lid, then slide it back into the skillet to cook the other side for another 5-7 minutes or until golden brown.
  • Transfer the kuku to a serving plate and let it cool for a few minutes before slicing.
  • Serve the Persian kuku warm or at room temperature. Enjoy!
