Ingredients
- 12 oz gluten-free pasta
- 4 oz pancetta, diced
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/4 tsp red pepper flakes
- 1 can (14 oz) crushed tomatoes
- 1/2 cup grated Pecorino Romano cheese
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions
- Cook the gluten-free pasta according to the package instructions. Drain and set aside.
- In a large skillet, cook the diced pancetta over medium heat until crispy. Remove the pancetta from the skillet and set aside, leaving the rendered fat in the skillet.
- Add the chopped onion to the skillet with the rendered fat and cook until softened, about 5 minutes.
- Stir in the minced garlic and red pepper flakes, and cook for an additional 1-2 minutes.
- Pour in the crushed tomatoes and bring the sauce to a simmer. Cook for 10 minutes, stirring occasionally.
- Add the cooked pasta and crispy pancetta to the skillet with the sauce. Toss to combine and heat through.
- Season with salt and pepper to taste.
- Divide the pasta among serving plates and sprinkle with grated Pecorino Romano cheese.
