Pappadeaux Pasta Mardi Gras

Ingredients
- 8 oz linguine pasta
- 1 lb large shrimp, peeled and deveined
- 1/2 cup andouille sausage, sliced
- 1/2 cup red bell pepper, diced
- 1/2 cup green bell pepper, diced
- 1/2 cup yellow onion, diced
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 2 tbsp Cajun seasoning
- 1/4 cup grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Cook the linguine pasta according to package instructions. Drain and set aside.
- In a large skillet, heat 1 tbsp of olive oil over medium-high heat. Add the shrimp and sprinkle with 1 tbsp of Cajun seasoning. Cook for 2-3 minutes on each side until pink and cooked through. Remove the shrimp from the skillet and set aside.
- In the same skillet, add the remaining 1 tbsp of olive oil. Add the andouille sausage and cook for 3-4 minutes until browned. Add the diced bell peppers, onion, and garlic. Cook for another 3-4 minutes until the vegetables are tender.
- Pour in the chicken broth and scrape up any browned bits from the bottom of the skillet. Stir in the heavy cream and remaining 1 tbsp of Cajun seasoning. Let the sauce simmer for 5 minutes until slightly thickened.
- Add the cooked linguine pasta and cooked shrimp to the skillet. Toss to coat everything in the sauce. Cook for an additional 2-3 minutes until heated through.
- Sprinkle the grated Parmesan cheese over the pasta and toss to combine. Season with salt and pepper to taste.
