  • 8 oz linguine pasta
  • 1 lb large shrimp, peeled and deveined
  • 1/2 cup andouille sausage, sliced
  • 1/2 cup red bell pepper, diced
  • 1/2 cup green bell pepper, diced
  • 1/2 cup yellow onion, diced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 2 tbsp Cajun seasoning
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Chopped green onions for garnish

  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 2 tbsp Cajun seasoning
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  • Cook the linguine pasta according to package instructions. Drain and set aside.
  • In a large skillet, heat 1 tbsp of olive oil over medium-high heat. Add the shrimp and sprinkle with 1 tbsp of Cajun seasoning. Cook for 2-3 minutes on each side until pink and cooked through. Remove the shrimp from the skillet and set aside.
  • In the same skillet, add the remaining 1 tbsp of olive oil. Add the andouille sausage and cook for 3-4 minutes until browned. Add the diced bell peppers, onion, and garlic. Cook for another 3-4 minutes until the vegetables are tender.
  • Pour in the chicken broth and scrape up any browned bits from the bottom of the skillet. Stir in the heavy cream and remaining 1 tbsp of Cajun seasoning. Let the sauce simmer for 5 minutes until slightly thickened.
  • Add the cooked linguine pasta and cooked shrimp to the skillet. Toss to coat everything in the sauce. Cook for an additional 2-3 minutes until heated through.
  • Sprinkle the grated Parmesan cheese over the pasta and toss to combine. Season with salt and pepper to taste.
