Instructions

  • In a medium saucepan, combine 1 cup of quinoa and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork and set aside.
  • In a small bowl, whisk together 1/4 cup of soy sauce, 2 tablespoons of rice vinegar, 2 tablespoons of peanut butter, 1 tablespoon of sriracha sauce, 1 tablespoon of maple syrup, and minced garlic. Set aside.
  • Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat. Add the cubed tofu and cook for 3-4 minutes on each side, or until golden and crispy. Season with salt and pepper to taste. Remove from the skillet and set aside.
  • In the same skillet, add 1 tablespoon of sesame oil. Add the cooked quinoa and stir-fry for 2-3 minutes. Pour in the prepared spicy peanut sauce and toss to coat the quinoa. Cook for an additional 2-3 minutes, or until heated through.
  • Serve the spicy peanut quinoa in bowls, topped with the pan-seared tofu. Garnish with chopped green onions and chopped peanuts. Enjoy!
