  • In a separate bowl, mix together 1/2 cup melted butter, 1/2 cup orange juice, 2 eggs, and 1 teaspoon vanilla extract.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  • Gently fold in 1 cup chopped cranberries and 1 tablespoon orange zest.
  • Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  • Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
