Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup of long-grain white rice
- 2 cups of chicken broth
- 1/2 cup of grated parmesan cheese
- 4 cloves of garlic, minced
- 1 teaspoon of dried thyme
- 1/2 teaspoon of paprika
- Salt and pepper to taste
- 2 tablespoons of olive oil
- Fresh parsley for garnish
Instructions
- Season the chicken breasts with salt, pepper, and paprika.
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
- Add the seasoned chicken breasts to the skillet and cook for 5-6 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the minced garlic and sauté for 1-2 minutes until fragrant.
- Add the rice to the skillet and stir to coat it with the garlic and oil.
- Pour in the chicken broth and add the dried thyme. Bring the mixture to a boil.
- Reduce the heat to low, cover the skillet, and let the rice simmer for 15-20 minutes, or until the liquid is absorbed and the rice is tender.
- Stir in the grated parmesan cheese until melted and well combined.
- Return the cooked chicken breasts to the skillet, nestling them into the rice.
- Cover the skillet and let it sit for 5 minutes to allow the flavors to meld together.
