Ingredients
- 2 cups oat flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 eggs
- 1 1/2 cups milk
- 2 tablespoons melted butter
Instructions
- In a large bowl, whisk together 2 cups of oat flour, 2 tablespoons of sugar, 2 teaspoons of baking powder, and 1/2 teaspoon of salt.
- In a separate bowl, beat 2 eggs and then stir in 1 1/2 cups of milk and 2 tablespoons of melted butter.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; the batter may be lumpy.
- Heat a lightly oiled griddle or frying pan over medium-high heat.
- Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
- Cook until bubbles form on the surface, then flip and cook until browned on the other side.
- Repeat with the remaining batter, adding more oil to the griddle as needed.
- Serve the pancakes warm with your favorite toppings and enjoy!
