  • 1/2 pound green beans, trimmed

  • 1/4 cup black olives
  • 4 cups mixed salad greens
  • 1/4 cup red onion, thinly sliced
  • 1 can (5 oz) tuna, drained and flaked

Instructions

  • Preheat the oven to 400°F (200°C).
  • In a large bowl, toss the cubed sweet potatoes with 1 tablespoon of olive oil, salt, and pepper. Spread them out on a baking sheet and roast for 25-30 minutes, or until tender and golden brown.
  • While the sweet potatoes are roasting, place the eggs in a saucepan and cover with cold water. Bring to a boil, then reduce heat and simmer for 8 minutes. Transfer the eggs to a bowl of ice water to cool. Once cooled, peel and halve the eggs.
  • In the same saucepan, bring water to a boil and blanch the green beans for 2-3 minutes, then transfer to a bowl of ice water to stop the cooking process. Drain and pat dry.
  • In a large serving bowl, arrange the mixed salad greens. Top with the roasted sweet potatoes, blanched green beans, cherry tomatoes, black olives, red onion, and flaked tuna.
  • Drizzle the balsamic vinaigrette over the salad and gently toss to combine.
  • Garnish the salad with the halved eggs and serve immediately.
