Loaded Nachos with Queso Dip

Ingredients
- 1 bag of tortilla chips
- 1 pound ground beef
- 1 packet of taco seasoning
- 1 cup of shredded cheddar cheese
- 1 cup of shredded Monterey Jack cheese
- 1/2 cup of diced tomatoes
- 1/4 cup of sliced black olives
- 1/4 cup of sliced jalapenos
- 1/4 cup of sour cream
- 1/4 cup of chopped fresh cilantro
- 1/4 cup of diced red onion
- 1 tablespoon of olive oil
- 2 tablespoons of all-purpose flour
- 1 cup of whole milk
- 1 cup of shredded cheddar cheese
- 1 cup of shredded Monterey Jack cheese
- 1/2 teaspoon of garlic powder
- 1/2 teaspoon of onion powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 350 degrees F.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon. Drain any excess grease. Add the taco seasoning and cook according to the package instructions.
- In a small saucepan, melt 2 tablespoons of butter over medium heat. Whisk in 2 tablespoons of all-purpose flour and cook for 1-2 minutes until golden brown.
- Gradually whisk in 1 cup of whole milk and cook until the mixture thickens, about 5 minutes.
- Stir in 1 cup of shredded cheddar cheese and 1 cup of shredded Monterey Jack cheese until melted and smooth. Season with 1/2 teaspoon of garlic powder, 1/2 teaspoon of onion powder, salt, and pepper to taste.
- Arrange the tortilla chips on a large baking sheet. Sprinkle the cooked ground beef, 1 cup of shredded cheddar cheese, and 1 cup of shredded Monterey Jack cheese over the chips.
- Bake in the preheated oven for 5-7 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and top with diced tomatoes, sliced black olives, sliced jalapenos, sour cream, chopped fresh cilantro, and diced red onion.
- Serve the loaded nachos with the queso dip on the side for dipping. Enjoy!
