Ingredients
- 1 tablespoon olive oil
- 1 large onion, thinly sliced
- 8 ounces mushrooms, sliced
- 8 large eggs
- 1/4 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded Swiss cheese
- 2 tablespoons chopped fresh parsley
Instructions
- In a large non-stick skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until they are golden brown and caramelized, about 15-20 minutes. Remove the onions from the skillet and set aside.
- In the same skillet, add the sliced mushrooms and cook for 5-7 minutes, until they are tender and any liquid has evaporated. Remove the mushrooms from the skillet and set aside.
- Preheat the broiler in your oven.
- In a large bowl, whisk together 8 large eggs, 1/4 cup of milk, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
