  • 1/2 teaspoon salt

  • 1 cup shredded Swiss cheese
  • 2 tablespoons chopped fresh parsley

Instructions

  • In a large non-stick skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until they are golden brown and caramelized, about 15-20 minutes. Remove the onions from the skillet and set aside.
  • In the same skillet, add the sliced mushrooms and cook for 5-7 minutes, until they are tender and any liquid has evaporated. Remove the mushrooms from the skillet and set aside.
  • Preheat the broiler in your oven.
  • In a large bowl, whisk together 8 large eggs, 1/4 cup of milk, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
  • Return the skillet to the stovetop and heat over medium heat. Add the caramelized onions and mushrooms back to the skillet, spreading them out evenly.
  • Pour the egg mixture over the onions and mushrooms. Cook for 5-7 minutes, lifting the edges of the frittata with a spatula to let the uncooked egg flow underneath.
  • Sprinkle 1 cup of shredded Swiss cheese over the top of the frittata. Place the skillet under the broiler and broil for 3-4 minutes, until the frittata is set and the cheese is melted and bubbly.
  • Remove the skillet from the oven and let the frittata cool for a few minutes. Sprinkle with 2 tablespoons of chopped fresh parsley before slicing and serving.
