Extra Cheesy Mushroom and Mozzarella Calzone

Ingredients
- 1 pound pizza dough
- 2 cups sliced mushrooms
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 1/2 cup ricotta cheese
- 1/4 cup marinara sauce
- 1/4 cup grated cheddar cheese
Instructions
- Preheat the oven to 450°F (230°C).
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add 2 cups of sliced mushrooms and sauté for 5-7 minutes until they are tender. Season with 1/2 teaspoon of salt, 1/4 teaspoon of black pepper, 1/2 teaspoon of dried oregano, and 1/2 teaspoon of garlic powder. Remove from heat and set aside.
- Divide the pizza dough into 4 equal portions. On a lightly floured surface, roll out each portion into a 8-inch circle.
- Spread 1 tablespoon of marinara sauce on one half of each dough circle, leaving a small border around the edge. Sprinkle 1/2 cup of shredded mozzarella cheese on top of the marinara sauce on each dough circle.
- Divide the sautéed mushrooms evenly among the dough circles, placing them on top of the mozzarella cheese.
- In a small bowl, mix together 1 cup of grated Parmesan cheese and 1/2 cup of ricotta cheese. Divide the cheese mixture evenly among the dough circles, placing it on top of the mushrooms.
- Fold the other half of the dough over the filling to create a half-moon shape. Press the edges firmly to seal, then crimp with a fork to secure the seal.
- Transfer the calzones to a baking sheet lined with parchment paper. Brush the tops with olive oil and sprinkle with 1/4 cup of grated cheddar cheese.
- Bake in the preheated oven for 15-20 minutes, or until the calzones are golden brown and the cheese is bubbly.
