Instructions

  • Preheat a grill or grill pan over medium-high heat.
  • In a bowl, toss the zucchini, red bell pepper, yellow bell pepper, and red onion with 2 tablespoons of olive oil, 1 teaspoon of salt, 1/2 teaspoon of black pepper, and 1 teaspoon of dried oregano.
  • Grill the vegetables for 3-4 minutes on each side, or until they have grill marks and are tender. Remove from the grill and set aside.
  • Lay out the mountain bread on a clean surface.
  • Spread 1/4 cup of hummus on each piece of mountain bread.
  • Divide the grilled vegetables evenly among the mountain bread, placing them on top of the hummus.
  • If desired, sprinkle each mountain bread with 1 tablespoon of crumbled feta cheese.
  • Roll up the mountain bread, enclosing the filling, and cut in half on a diagonal.
  • Serve immediately and enjoy!
