Hummus and Grilled Vegetable Mountain Bread

Ingredients
- 4 pieces of mountain bread
- 1 cup of hummus
- 1 zucchini, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, sliced
- 2 tablespoons of olive oil
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1 teaspoon of dried oregano
- 1/4 cup of crumbled feta cheese (optional)
Instructions
- Preheat a grill or grill pan over medium-high heat.
- In a bowl, toss the zucchini, red bell pepper, yellow bell pepper, and red onion with 2 tablespoons of olive oil, 1 teaspoon of salt, 1/2 teaspoon of black pepper, and 1 teaspoon of dried oregano.
- Grill the vegetables for 3-4 minutes on each side, or until they have grill marks and are tender. Remove from the grill and set aside.
- Lay out the mountain bread on a clean surface.
- Spread 1/4 cup of hummus on each piece of mountain bread.
- Divide the grilled vegetables evenly among the mountain bread, placing them on top of the hummus.
- If desired, sprinkle each mountain bread with 1 tablespoon of crumbled feta cheese.
- Roll up the mountain bread, enclosing the filling, and cut in half on a diagonal.
- Serve immediately and enjoy!
