Ingredients
- 1 tablespoon of vegetable oil
- 1/2 cup of diced onion
- 2 jalapeno peppers, seeded and diced
- 2 cloves of garlic, minced
- 1 cup of shredded Monterey Jack cheese
- 1 cup of shredded mozzarella cheese
- 1/2 cup of crumbled queso fresco
- 1/4 cup of chopped fresh cilantro
- 1/4 cup of chopped fresh tomatoes
- Tortilla chips, for serving
Instructions
- Preheat the oven to 375 degrees F.
- In a large skillet, heat 1 tablespoon of vegetable oil over medium heat.
- Add 1/2 cup of diced onion and 2 diced jalapeno peppers to the skillet, and cook for 3-4 minutes until softened.
- Add 2 minced cloves of garlic to the skillet and cook for an additional 1 minute.
- Reduce the heat to low and add 1 cup of shredded Monterey Jack cheese, 1 cup of shredded mozzarella cheese, and 1/2 cup of crumbled queso fresco to the skillet. Stir until the cheese is melted and bubbly.
- Transfer the skillet to the preheated oven and bake for 5-7 minutes until the top is golden and bubbly.
- Remove from the oven and sprinkle with 1/4 cup of chopped fresh cilantro and 1/4 cup of chopped fresh tomatoes.
- Serve the queso fundido immediately with tortilla chips for dipping.
