  • 12 small corn or flour tortillas
  • 1 cup of shredded lettuce
  • 1 cup of diced tomatoes
  • 1/2 cup of chopped cilantro
  • 1/2 cup of diced onion
  • 1 cup of shredded cheese
  • 1/2 cup of sour cream
  • 1/4 cup of salsa
  • 1 lime, cut into wedges

Instructions

  • In a large skillet, heat 1 tablespoon of vegetable oil over medium heat.
  • Add 1 small diced onion and 2 cloves of minced garlic to the skillet, and cook until softened.
  • If using ground beef, pork, or chicken, add the meat to the skillet and cook until browned. If using black beans, add them to the skillet and cook until heated through.
  • Season the meat or beans with 1 teaspoon of ground cumin, 1 teaspoon of chili powder, 1/2 teaspoon of paprika, 1/2 teaspoon of oregano, and salt and pepper to taste. Stir to combine and cook for an additional 2-3 minutes.
  • In a separate skillet, heat the tortillas over medium heat for about 30 seconds on each side, until warm and slightly browned.
  • To assemble the tacos, place a spoonful of the meat or bean mixture onto each tortilla. Top with shredded lettuce, diced tomatoes, chopped cilantro, diced onion, shredded cheese, a dollop of sour cream, and a spoonful of salsa.
  • Serve the tacos with lime wedges on the side for squeezing over the top.
