Authentic Mexican Tacos

Ingredients
- 1 lb of ground beef or pork, or 2 chicken breasts, or 1 can of black beans for vegetarian option
- 1 tablespoon of vegetable oil
- 1 small onion, diced
- 2 cloves of garlic, minced
- 1 teaspoon of ground cumin
- 1 teaspoon of chili powder
- 1/2 teaspoon of paprika
- 1/2 teaspoon of oregano
- Salt and pepper to taste
- 12 small corn or flour tortillas
- 1 cup of shredded lettuce
- 1 cup of diced tomatoes
- 1/2 cup of chopped cilantro
- 1/2 cup of diced onion
- 1 cup of shredded cheese
- 1/2 cup of sour cream
- 1/4 cup of salsa
- 1 lime, cut into wedges
Instructions
- In a large skillet, heat 1 tablespoon of vegetable oil over medium heat.
- Add 1 small diced onion and 2 cloves of minced garlic to the skillet, and cook until softened.
- If using ground beef, pork, or chicken, add the meat to the skillet and cook until browned. If using black beans, add them to the skillet and cook until heated through.
- Season the meat or beans with 1 teaspoon of ground cumin, 1 teaspoon of chili powder, 1/2 teaspoon of paprika, 1/2 teaspoon of oregano, and salt and pepper to taste. Stir to combine and cook for an additional 2-3 minutes.
- In a separate skillet, heat the tortillas over medium heat for about 30 seconds on each side, until warm and slightly browned.
- To assemble the tacos, place a spoonful of the meat or bean mixture onto each tortilla. Top with shredded lettuce, diced tomatoes, chopped cilantro, diced onion, shredded cheese, a dollop of sour cream, and a spoonful of salsa.
- Serve the tacos with lime wedges on the side for squeezing over the top.
