Ingredients
- 2 cups of mixed salad greens
- 1 cup of cherry tomatoes, halved
- 1/2 cup of cucumber, sliced
- 1/4 cup of red onion, thinly sliced
- 1/4 cup of Kalamata olives
- 1/4 cup of feta cheese, crumbled
- 1/4 cup of extra virgin olive oil
- 2 tablespoons of red wine vinegar
- 1 teaspoon of dried oregano
- Salt and pepper to taste
Instructions
- In a large bowl, combine 2 cups of mixed salad greens, 1 cup of cherry tomatoes, 1/2 cup of cucumber, 1/4 cup of red onion, and 1/4 cup of Kalamata olives.
- In a small bowl, whisk together 1/4 cup of extra virgin olive oil, 2 tablespoons of red wine vinegar, 1 teaspoon of dried oregano, and salt and pepper to taste.
- Drizzle the dressing over the salad and toss to combine.
- Top the salad with 1/4 cup of crumbled feta cheese.
- Serve immediately and enjoy!
