  • 1 cup cherry tomatoes, halved
  • 1/2 English cucumber, diced
  • 1/4 cup Kalamata olives, sliced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup lemon juice
  • 2 tablespoons extra virgin olive oil

  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup lemon juice
  • 2 tablespoons extra virgin olive oil

Instructions

  • Rinse the quinoa under cold water. In a medium saucepan, bring 2 cups of water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork and let it cool.
  • In a small bowl, mix the olive oil, dried oregano, garlic powder, salt, and pepper. Toss the shrimp in the mixture until evenly coated. Preheat a grill or grill pan over medium-high heat. Grill the shrimp for 2-3 minutes per side, or until pink and opaque. Remove from heat and set aside.
  • In a large bowl, combine the cooked quinoa, grilled shrimp, cherry tomatoes, cucumber, Kalamata olives, red onion, parsley, and feta cheese.
  • In a small bowl, whisk together the lemon juice and extra virgin olive oil. Pour the dressing over the salad and toss to combine.
  • Serve immediately or refrigerate for at least 30 minutes to allow the flavors to meld. Enjoy!
