  • 3 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cherry tomatoes, halved
  • 1/2 English cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup Kalamata olives, pitted and chopped
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup crumbled feta cheese

  • 1/2 English cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup Kalamata olives, pitted and chopped
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup crumbled feta cheese

Instructions

  • Rinse the quinoa under cold water using a fine mesh strainer.
  • In a medium saucepan, bring 2 cups of water to a boil. Add the rinsed quinoa, reduce heat to low, cover, and simmer for 15 minutes or until all the water is absorbed. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork and transfer to a large bowl to cool.
  • In a small bowl, whisk together the extra virgin olive oil, lemon juice, Dijon mustard, minced garlic, salt, and black pepper to make the dressing.
  • Add the cherry tomatoes, cucumber, red onion, Kalamata olives, and fresh parsley to the bowl with the quinoa.
  • Pour the dressing over the quinoa and vegetables, and toss to combine.
  • Gently fold in the crumbled feta cheese.
  • Refrigerate for at least 30 minutes before serving to allow the flavors to meld together.
  • Serve chilled and enjoy!
