  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped fresh parsley
  • 1 cup Greek yogurt
  • 1/2 cucumber, grated and squeezed to remove excess moisture
  • 1 clove garlic, minced
  • 1 tbsp lemon juice
  • 1 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  • In a large skillet over medium heat, cook 1 lb of ground lamb, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes.
  • Add 1 small red onion and 2 cloves of minced garlic to the skillet and cook for an additional 2-3 minutes until the onion is softened.
  • Stir in 1 tsp ground cumin, 1 tsp ground coriander, 1/2 tsp paprika, 1/4 tsp cinnamon, and salt and pepper to taste. Cook for another 1-2 minutes to toast the spices. Remove from heat and set aside.
