Ingredients
- 1 lb boneless, skinless chicken breasts
- 1/4 cup olive oil

- 4 large flour tortillas
- 1 cup hummus
- 2 ripe avocados, sliced
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, thinly sliced
- 1/4 cup red onion, thinly sliced
- 1/4 cup crumbled feta cheese
- 1/4 cup fresh parsley, chopped
- 1/4 cup Greek yogurt (optional, for serving)
Instructions
- Preheat grill to medium-high heat.
- In a small bowl, mix together 1/4 cup olive oil, 2 tsp dried oregano, 1/2 tsp salt, and 1/4 tsp black pepper.
- Brush the olive oil mixture over the chicken breasts and grill for 6-7 minutes per side, or until fully cooked. Remove from grill and let rest for 5 minutes before slicing into strips.
- Warm the flour tortillas in a dry skillet over medium heat for 1-2 minutes on each side, or until soft and pliable.
- Spread 1/4 cup of hummus onto each tortilla, leaving a border around the edges.
- Divide the sliced grilled chicken, avocado, cherry tomatoes, cucumber, red onion, feta cheese, and parsley evenly among the tortillas.
- Fold in the sides of the tortillas and then roll them up tightly, securing with toothpicks if necessary.
- If desired, serve with a dollop of Greek yogurt on the side for dipping.
