  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 6 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup Kalamata olives, pitted
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup Greek vinaigrette dressing

  • 1/4 cup Kalamata olives, pitted
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup Greek vinaigrette dressing

Instructions

  • In a small bowl, whisk together 1/4 cup of olive oil, 2 tablespoons of lemon juice, minced garlic, dried oregano, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper to make the marinade.
  • Place the chicken breasts in a resealable plastic bag and pour the marinade over them. Seal the bag and massage the marinade into the chicken. Marinate in the refrigerator for at least 30 minutes.
  • Preheat the grill to medium-high heat. Remove the chicken from the marinade and discard the excess marinade. Grill the chicken for 6-7 minutes per side, or until cooked through. Remove from the grill and let it rest for 5 minutes before slicing.
  • In a large bowl, combine the mixed salad greens, cherry tomatoes, cucumber, red onion, Kalamata olives, feta cheese, and fresh parsley.
  • Drizzle the Greek vinaigrette dressing over the salad and toss to coat evenly.
  • Divide the salad onto 4 plates and top each with sliced grilled chicken.
  • Serve immediately and enjoy!
