Mediterranean Grilled Chicken and Couscous Bowl with Roasted Vegetables
Created by: Howcan Team
Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup of couscous
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 zucchini, sliced
- 1 red onion, sliced
- 1/4 cup of olive oil
- 2 tablespoons of lemon juice
- 2 cloves of garlic, minced
- 1 teaspoon of dried oregano
- 1 teaspoon of dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the grill to medium-high heat.
- In a small bowl, whisk together 1/4 cup of olive oil, 2 tablespoons of lemon juice, minced garlic, dried oregano, dried thyme, salt, and pepper.
- Place the chicken breasts in a resealable plastic bag and pour half of the marinade over the chicken. Seal the bag and massage the marinade into the chicken. Let it marinate for at least 15 minutes.
- In a large bowl, toss the sliced red bell pepper, yellow bell pepper, zucchini, and red onion with the remaining marinade.
- Spread the vegetables in a single layer on a baking sheet and roast in the preheated oven at 400°F for 20-25 minutes, or until they are tender and slightly charred.
- While the vegetables are roasting, grill the marinated chicken breasts for 6-7 minutes per side, or until they are cooked through and have nice grill marks. Remove from the grill and let them rest for a few minutes before slicing.
- In the meantime, prepare the couscous according to the package instructions.
- To assemble the bowls, divide the cooked couscous among 4 bowls, top with the grilled chicken slices, and roasted vegetables. Garnish with fresh parsley and serve immediately.
