Instructions

  • Preheat the grill to medium-high heat.
  • In a small bowl, whisk together 1/4 cup of olive oil, 2 tablespoons of lemon juice, minced garlic, dried oregano, dried thyme, salt, and pepper.
  • Place the chicken breasts in a resealable plastic bag and pour half of the marinade over the chicken. Seal the bag and massage the marinade into the chicken. Let it marinate for at least 15 minutes.
  • In a large bowl, toss the sliced red bell pepper, yellow bell pepper, zucchini, and red onion with the remaining marinade.
  • Spread the vegetables in a single layer on a baking sheet and roast in the preheated oven at 400°F for 20-25 minutes, or until they are tender and slightly charred.
