Ingredients
- 2 boneless, skinless chicken breasts
- 1 head of romaine lettuce, chopped
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/2 cup Kalamata olives
- 1/2 cup crumbled feta cheese
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Preheat grill to medium-high heat.
- Season the chicken breasts with salt, pepper, and a drizzle of olive oil. Grill for 6-7 minutes on each side, or until fully cooked. Remove from grill and let rest for 5 minutes before slicing into strips.
