  • 1 3/4 cups vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1/2 English cucumber, diced
  • 1/4 cup Kalamata olives, sliced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled (optional)
  • 1/4 cup hummus
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

  • 1/2 English cucumber, diced
  • 1/4 cup Kalamata olives, sliced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled (optional)
  • 1/4 cup hummus
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  • Rinse the quinoa under cold water using a fine mesh strainer.
  • In a medium saucepan, bring the vegetable broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until all the liquid is absorbed. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork.
  • In a small bowl, whisk together the extra virgin olive oil, lemon juice, dried oregano, salt, and pepper to make the dressing.
  • Divide the cooked quinoa among 4 bowls. Arrange the cherry tomatoes, cucumber, Kalamata olives, red onion, and fresh parsley on top of the quinoa.
  • Drizzle the dressing over the grain bowls.
  • Top each bowl with a dollop of hummus and crumbled feta cheese, if using.
  • Serve immediately and enjoy!
