Mediterranean Grain Bowl

Ingredients
- 1 cup quinoa
- 1 3/4 cups vegetable broth
- 1 cup cherry tomatoes, halved
- 1/2 English cucumber, diced
- 1/4 cup Kalamata olives, sliced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup feta cheese, crumbled (optional)
- 1/4 cup hummus
- 2 tablespoons extra virgin olive oil
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water using a fine mesh strainer.
- In a medium saucepan, bring the vegetable broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until all the liquid is absorbed. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork.
- In a small bowl, whisk together the extra virgin olive oil, lemon juice, dried oregano, salt, and pepper to make the dressing.
- Divide the cooked quinoa among 4 bowls. Arrange the cherry tomatoes, cucumber, Kalamata olives, red onion, and fresh parsley on top of the quinoa.
- Drizzle the dressing over the grain bowls.
- Top each bowl with a dollop of hummus and crumbled feta cheese, if using.
- Serve immediately and enjoy!
