Ingredients
- 8 large eggs
- 1/4 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1 small red onion, thinly sliced
- 1 red bell pepper, diced
- 1 cup baby spinach
- 1/2 cup cherry tomatoes, halved
- 1/2 cup crumbled feta cheese
- 2 tablespoons chopped fresh parsley
Instructions
- In a large bowl, whisk together 8 large eggs, 1/4 cup milk, 1/2 teaspoon salt, and 1/4 teaspoon black pepper until well combined.
- Heat 1 tablespoon of olive oil in a 10-inch non-stick skillet over medium heat. Add 1 small red onion and cook until softened, about 3 minutes.
- Add 1 diced red bell pepper to the skillet and cook for another 2 minutes.
- Stir in 1 cup of baby spinach and cook until wilted, about 1 minute.
- Pour the egg mixture into the skillet, then scatter 1/2 cup of halved cherry tomatoes and 1/2 cup of crumbled feta cheese evenly over the top.
- Cover and cook for 8-10 minutes, or until the edges are set but the center is still slightly jiggly.
- Preheat the broiler. Place the skillet under the broiler and broil for 2-3 minutes, or until the top is set and golden brown.
- Sprinkle with 2 tablespoons of chopped fresh parsley before serving.
