Instructions

  • Preheat the broiler in your oven.
  • In a large bowl, whisk together 6 large eggs, 1/4 cup milk, 1/2 teaspoon salt, and 1/4 teaspoon black pepper until well combined.
  • Heat 1 tablespoon of olive oil in a 10-inch non-stick, oven-safe skillet over medium heat.
  • Add 1/2 cup diced red bell pepper and 1/2 cup diced red onion to the skillet and cook for 3-4 minutes until softened.
  • Add 1 cup baby spinach and cook for an additional 1-2 minutes until wilted.
  • Pour the egg mixture into the skillet and gently stir to distribute the vegetables evenly.
  • Arrange 1/2 cup sliced cherry tomatoes on top of the egg mixture and cook for 4-5 minutes, lifting the edges of the frittata with a spatula to let the uncooked egg flow underneath.
  • Sprinkle 1/4 cup crumbled feta cheese on top of the frittata and transfer the skillet to the preheated broiler.
  • Broil for 3-4 minutes until the frittata is set and the top is lightly golden.
  • Remove from the oven, sprinkle with 2 tablespoons chopped fresh parsley, and let it cool for a few minutes.
