  • 1 1/2 cups vegetable broth
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup Kalamata olives, pitted and halved
  • 1/4 cup fresh parsley, chopped
  • 4 salmon fillets
  • 1 tablespoon dried oregano
  • 1 tablespoon lemon zest
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil

Instructions

  • In a medium saucepan, bring the vegetable broth to a boil. Stir in 1 cup of couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork and transfer to a large bowl to cool.
  • In a small bowl, whisk together 1/4 cup extra virgin olive oil, 2 tablespoons lemon juice, Dijon mustard, salt, and black pepper to make the dressing. Pour the dressing over the cooled couscous and toss to combine.
  • Add the cherry tomatoes, cucumber, red onion, Kalamata olives, and fresh parsley to the couscous mixture. Toss to combine and set aside.
  • Preheat the grill to medium-high heat. In a small bowl, mix together 1 tablespoon dried oregano, 1 tablespoon lemon zest, minced garlic, and 2 tablespoons olive oil to create a marinade for the salmon fillets.
