Ingredients
- 1 cup couscous
- 1 1/2 cups vegetable broth
- 1/4 cup extra virgin olive oil
- 2 tablespoons lemon juice
- 1 teaspoon Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup Kalamata olives, pitted and halved
- 1/4 cup fresh parsley, chopped
- 4 salmon fillets
- 1 tablespoon dried oregano
- 1 tablespoon lemon zest
- 2 cloves garlic, minced
- 2 tablespoons olive oil
Instructions
- In a medium saucepan, bring the vegetable broth to a boil. Stir in 1 cup of couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork and transfer to a large bowl to cool.
- In a small bowl, whisk together 1/4 cup extra virgin olive oil, 2 tablespoons lemon juice, Dijon mustard, salt, and black pepper to make the dressing. Pour the dressing over the cooled couscous and toss to combine.
- Add the cherry tomatoes, cucumber, red onion, Kalamata olives, and fresh parsley to the couscous mixture. Toss to combine and set aside.
- Preheat the grill to medium-high heat. In a small bowl, mix together 1 tablespoon dried oregano, 1 tablespoon lemon zest, minced garlic, and 2 tablespoons olive oil to create a marinade for the salmon fillets.
- Brush the salmon fillets with the marinade and grill for 3-4 minutes per side, or until the salmon is cooked through and has grill marks.
- Serve the grilled salmon on top of the Mediterranean couscous salad and enjoy!
