- 1 lb chicken breast, cut into bite-sized pieces
- 1 cup uncooked white rice

- 1/4 cup red onion, finely chopped
- 1/4 cup Kalamata olives, sliced
- 1/4 cup crumbled feta cheese
- 2 tablespoons fresh lemon juice
- 2 tablespoons chopped fresh parsley
Instructions
- In a medium saucepan, combine the uncooked white rice and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
- While the rice is cooking, heat the olive oil in a large skillet over medium-high heat. Add the chicken pieces, dried oregano, dried thyme, garlic powder, onion powder, salt, and black pepper. Cook for 6-8 minutes, or until the chicken is cooked through and golden brown.
