  • 4 boneless, skinless chicken breasts
  • 1 cup of couscous
  • 1 1/2 cups of chicken broth
  • 1 cup of cherry tomatoes, halved
  • 1/2 cup of cucumber, diced
  • 1/4 cup of red onion, finely chopped
  • 1/4 cup of Kalamata olives, sliced
  • 1/4 cup of feta cheese, crumbled
  • 2 tablespoons of olive oil
  • 2 tablespoons of lemon juice
  • 2 cloves of garlic, minced
  • 1 teaspoon of dried oregano
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper

  • In a large bowl, whisk together 1 tablespoon of olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper.
  • Add the cooked couscous, cherry tomatoes, cucumber, red onion, and Kalamata olives to the bowl with the dressing. Toss to combine.
  • Divide the couscous mixture among 4 bowls. Slice the grilled chicken and place on top of the couscous. Sprinkle with crumbled feta cheese.
