Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup of couscous
- 1 1/2 cups of chicken broth
- 1 cup of cherry tomatoes, halved
- 1/2 cup of cucumber, diced
- 1/4 cup of red onion, finely chopped
- 1/4 cup of Kalamata olives, sliced
- 1/4 cup of feta cheese, crumbled
- 2 tablespoons of olive oil
- 2 tablespoons of lemon juice
- 2 cloves of garlic, minced
- 1 teaspoon of dried oregano
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
Instructions
- Preheat grill to medium-high heat.
- Season the chicken breasts with salt, pepper, and 1 tablespoon of olive oil. Grill for 6-7 minutes on each side, or until fully cooked. Set aside to rest.
- In a medium saucepan, bring the chicken broth to a boil. Stir in the couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.
- In a large bowl, whisk together 1 tablespoon of olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper.
- Add the cooked couscous, cherry tomatoes, cucumber, red onion, and Kalamata olives to the bowl with the dressing. Toss to combine.
- Divide the couscous mixture among 4 bowls. Slice the grilled chicken and place on top of the couscous. Sprinkle with crumbled feta cheese.
- Serve immediately and enjoy!
