Instructions

  • Cook the gluten-free pasta according to the package instructions. Drain and set aside.
  • In a large skillet, heat 2 tbsp of olive oil over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant.
  • Add the halved cherry tomatoes to the skillet and cook for 5-6 minutes, stirring occasionally, until they start to soften and release their juices.
  • Add the cooked pasta to the skillet and toss to combine with the tomatoes and garlic. Cook for an additional 2-3 minutes to heat the pasta through.
  • Remove the skillet from the heat and stir in the chopped basil and diced mozzarella. Season with salt and pepper to taste.
  • Divide the pasta among serving plates and sprinkle with grated Parmesan cheese before serving.
