Instructions

  • Preheat the oven to 375 degrees F.
  • In a small bowl, mix together 1/4 cup Dijon mustard and 1/4 cup maple syrup to create the marinade.
  • Season the chicken breasts with salt, pepper, and 1 teaspoon dried thyme.
  • Heat 2 tablespoons of olive oil in a large oven-safe skillet over medium-high heat. Add 2 cloves of minced garlic and sauté for 1 minute.
  • Add the seasoned chicken breasts to the skillet and cook for 3-4 minutes on each side until golden brown.
  • Pour the maple Dijon marinade over the chicken in the skillet, then transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through.
  • While the chicken is baking, rinse 1 cup of wild rice under cold water. In a separate pot, bring 2 cups of chicken broth to a boil. Add the rinsed wild rice to the boiling broth, reduce heat to low, cover, and simmer for 30-35 minutes, or until the rice is tender and the liquid is absorbed.
  • Once the chicken is done, remove the skillet from the oven and let it rest for a few minutes. Sprinkle with 1/4 cup chopped fresh parsley before serving.
