Ingredients
- 1 pound of large shrimp, peeled and deveined
- 2 tablespoons of olive oil
- 1 teaspoon of chili powder
- 1/2 teaspoon of cumin
- 1/2 teaspoon of garlic powder
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 8 small flour tortillas
- 1 cup of shredded cabbage
- 1/4 cup of chopped fresh cilantro
- 1 lime, cut into wedges
- For the spicy mango salsa:
- 2 ripe mangoes, peeled, pitted, and diced
- 1/2 red onion, finely chopped
- 1 jalapeno pepper, seeded and finely chopped
- 1/4 cup of chopped fresh cilantro
- 2 tablespoons of lime juice
- 1/2 teaspoon of salt
Instructions
- In a medium bowl, combine the diced mangoes, red onion, jalapeno pepper, cilantro, lime juice, and salt to make the spicy mango salsa. Mix well and set aside.
- In a separate bowl, toss the shrimp with olive oil, chili powder, cumin, garlic powder, salt, and black pepper until evenly coated.
- Heat a large skillet over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes per side, or until they are pink and opaque. Remove from heat and set aside.
- Warm the flour tortillas in a dry skillet or in the microwave according to package instructions.
- To assemble the tacos, divide the shredded cabbage evenly among the tortillas. Top with the cooked shrimp, a spoonful of spicy mango salsa, and a sprinkle of chopped cilantro. Serve with lime wedges on the side.
