  • 1/4 cup chopped fresh cilantro

  • 1 lime, juiced

Instructions

  • In a small bowl, mix together the chili powder, cumin, garlic powder, 1/2 tsp salt, and black pepper. Rub the spice mixture over the chicken breasts.
  • Heat the olive oil in a large skillet over medium-high heat. Add the seasoned chicken breasts and cook for 6-7 minutes on each side, or until cooked through. Remove from the skillet and let rest for 5 minutes before slicing into strips.
  • While the chicken is cooking, prepare the mango salsa by combining the diced mango, red onion, cilantro, jalapeno, lime juice, and 1/4 tsp salt in a bowl. Mix well and set aside.
  • Warm the tortillas in a dry skillet or in the microwave until soft and pliable.
  • To assemble the tacos, place a few slices of the cooked chicken on each tortilla and top with a generous spoonful of mango salsa.
