Mango Salsa Chicken Tacos

Ingredients
- 1 lb boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 8 small flour or corn tortillas
- 1 cup diced mango
- 1/4 cup diced red onion
- 1/4 cup chopped fresh cilantro
- 1 jalapeno, seeded and diced
- 1 lime, juiced
- 1/4 tsp salt
Instructions
- In a small bowl, mix together the chili powder, cumin, garlic powder, 1/2 tsp salt, and black pepper. Rub the spice mixture over the chicken breasts.
- Heat the olive oil in a large skillet over medium-high heat. Add the seasoned chicken breasts and cook for 6-7 minutes on each side, or until cooked through. Remove from the skillet and let rest for 5 minutes before slicing into strips.
- While the chicken is cooking, prepare the mango salsa by combining the diced mango, red onion, cilantro, jalapeno, lime juice, and 1/4 tsp salt in a bowl. Mix well and set aside.
- Warm the tortillas in a dry skillet or in the microwave until soft and pliable.
- To assemble the tacos, place a few slices of the cooked chicken on each tortilla and top with a generous spoonful of mango salsa.
- Serve the mango salsa chicken tacos immediately and enjoy!
