Ingredients
- 2 ripe mangoes, diced
- 1/2 red onion, finely chopped
- 1 jalapeno pepper, seeded and minced
- 1/4 cup fresh cilantro, chopped
- 1 red bell pepper, diced
- 1 lime, juiced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a large bowl, combine 2 ripe mangoes, diced, 1/2 red onion, finely chopped, 1 jalapeno pepper, seeded and minced, 1/4 cup fresh cilantro, chopped, and 1 red bell pepper, diced.
- Add the juice of 1 lime, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper to the bowl.
- Gently toss all the ingredients together until well combined.
- Refrigerate the mango salsa for at least 30 minutes to allow the flavors to meld together.
- Serve chilled and enjoy with grilled meats, fish, or as a dip for tortilla chips.
