Ingredients
- 2 cups cooked jasmine rice, cooled
- 1 ripe mango, diced
- 1/2 cup cashews
- 1/4 cup raisins
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 2 tablespoons soy sauce
- 1 tablespoon curry powder
- 1/4 teaspoon red pepper flakes
- 2 tablespoons vegetable oil
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat a large skillet or wok over medium-high heat. Add the vegetable oil and swirl to coat the pan.
- Add the diced onion and minced garlic to the skillet. Stir-fry for 2-3 minutes until the onion is translucent and fragrant.

- Add the diced mango, cashews, and raisins to the skillet. Stir-fry for another 2-3 minutes until the mango is heated through and the cashews are lightly toasted.
- Pour the soy sauce over the mango fried rice and toss to coat everything evenly. Cook for an additional 1-2 minutes.
- Taste the fried rice and adjust the seasoning with salt if needed.
- Transfer the mango fried rice to serving plates and garnish with fresh cilantro. Serve hot and enjoy!
