Instructions

  • In a large bowl, combine the shredded chicken, diced mangoes, chopped red onion, and cilantro.
  • In a small bowl, mix together the mayonnaise, lime juice, curry powder, salt, and pepper.
  • Pour the mayonnaise mixture over the chicken and mango mixture, and toss until well combined.
  • Lay out the flour tortillas and divide the chicken and mango mixture evenly among them, spreading it out in the center of each tortilla.
  • Fold the sides of the tortillas over the filling, then roll them up tightly to form wraps.
  • If desired, heat a large skillet over medium heat and lightly toast the wraps on all sides until golden brown and crispy, about 2-3 minutes per side.
  • Slice the wraps in half diagonally and serve immediately. Enjoy!
