Instructions

  • Lay out the tortillas and divide the shredded lettuce evenly among them, leaving a border around the edges.
  • Spoon the mango and black bean mixture on top of the lettuce, spreading it out evenly. Sprinkle each wrap with shredded cheddar cheese.
  • Drizzle a spoonful of Greek yogurt or sour cream over the filling.
  • Fold in the sides of the tortilla and then roll it up tightly, tucking in the filling as you go.
  • Heat a large skillet over medium heat. Place the wraps seam-side down in the skillet and cook for 2-3 minutes on each side, or until the tortilla is golden brown and crispy.
  • Remove from the skillet and let cool for a minute before slicing in half. Serve immediately and enjoy!
