Ingredients
- 1 ripe mango, diced
- 1 can (15 oz) black beans, drained and rinsed
- 1/2 red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- 1 teaspoon cumin
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- 4 large whole wheat or spinach tortillas
- 1 cup shredded lettuce
- 1/2 cup shredded cheddar cheese
- 1/4 cup plain Greek yogurt or sour cream
Instructions
- In a large bowl, combine the diced mango, black beans, red onion, cilantro, lime juice, cumin, chili powder, salt, and pepper. Mix well to combine.
- Lay out the tortillas and divide the shredded lettuce evenly among them, leaving a border around the edges.
- Spoon the mango and black bean mixture on top of the lettuce, spreading it out evenly. Sprinkle each wrap with shredded cheddar cheese.
- Drizzle a spoonful of Greek yogurt or sour cream over the filling.
- Fold in the sides of the tortilla and then roll it up tightly, tucking in the filling as you go.
- Heat a large skillet over medium heat. Place the wraps seam-side down in the skillet and cook for 2-3 minutes on each side, or until the tortilla is golden brown and crispy.
- Remove from the skillet and let cool for a minute before slicing in half. Serve immediately and enjoy!
