Ingredients
- 2 lbs beef, cut into cubes
- 5 shallots, chopped
- 5 cloves garlic, minced
- 1 inch ginger, grated
- 2 lemongrass stalks, bruised
- 4 kaffir lime leaves
- 1 cinnamon stick
- 1 star anise
- 1 cup coconut milk
- 1 cup water
- 3 tbsp vegetable oil
- Salt to taste
Instructions
- In a large pot, heat 3 tbsp of vegetable oil over medium heat.
- Add the chopped shallots, minced garlic, and grated ginger. Sauté until fragrant.
- Add the beef cubes and cook until browned on all sides.
- Stir in the lemongrass, kaffir lime leaves, cinnamon stick, and star anise.
- Pour in the coconut milk and water. Season with salt to taste.
- Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 2-3 hours, stirring occasionally, until the beef is tender and the sauce has thickened.
- Once the beef is tender and the sauce has thickened, remove the lemongrass, kaffir lime leaves, cinnamon stick, and star anise.
- Serve the Malaysian Beef Rendang hot with steamed rice or coconut rice. Enjoy!
