Instructions

  • In a large pot, heat 3 tbsp of vegetable oil over medium heat.
  • Add the chopped shallots, minced garlic, and grated ginger. Sauté until fragrant.
  • Add the beef cubes and cook until browned on all sides.
  • Stir in the lemongrass, kaffir lime leaves, cinnamon stick, and star anise.
  • Pour in the coconut milk and water. Season with salt to taste.
  • Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 2-3 hours, stirring occasionally, until the beef is tender and the sauce has thickened.
  • Once the beef is tender and the sauce has thickened, remove the lemongrass, kaffir lime leaves, cinnamon stick, and star anise.
  • Serve the Malaysian Beef Rendang hot with steamed rice or coconut rice. Enjoy!
