  • 4 large lettuce leaves
  • 1/2 cup shredded carrots
  • 1/2 cup sliced cucumber
  • 1/4 cup sliced red bell pepper
  • 2 tablespoons of soy sauce
  • 1 tablespoon of rice vinegar
  • 1 teaspoon of sesame oil
  • 1/2 teaspoon of grated ginger
  • 1/4 teaspoon of garlic powder
  • Salt and pepper to taste

Instructions

  • Slice the pressed tofu into thin strips.
  • In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, ginger, and garlic powder to make the marinade.
  • Place the tofu strips in a shallow dish and pour the marinade over them. Let it marinate for 10 minutes.
  • Heat a non-stick skillet over medium heat. Add the marinated tofu strips and cook for 3-4 minutes on each side, or until golden brown and crispy.
  • Lay out the low-carb wraps and place 2 lettuce leaves on each wrap.
  • Divide the cooked tofu, shredded carrots, sliced cucumber, and red bell pepper between the wraps.
  • Season with salt and pepper to taste.
  • Roll up the wraps, tucking in the sides as you go.
  • Slice each wrap in half and serve immediately. Enjoy!
