Low-Carb Tofu Wrap

Ingredients
- 1 block of firm tofu, drained and pressed
- 4 large lettuce leaves
- 1/2 cup shredded carrots
- 1/2 cup sliced cucumber
- 1/4 cup sliced red bell pepper
- 2 tablespoons of soy sauce
- 1 tablespoon of rice vinegar
- 1 teaspoon of sesame oil
- 1/2 teaspoon of grated ginger
- 1/4 teaspoon of garlic powder
- Salt and pepper to taste
- 2 low-carb wraps
Instructions
- Slice the pressed tofu into thin strips.
- In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, ginger, and garlic powder to make the marinade.
- Place the tofu strips in a shallow dish and pour the marinade over them. Let it marinate for 10 minutes.
- Heat a non-stick skillet over medium heat. Add the marinated tofu strips and cook for 3-4 minutes on each side, or until golden brown and crispy.
- Lay out the low-carb wraps and place 2 lettuce leaves on each wrap.
- Divide the cooked tofu, shredded carrots, sliced cucumber, and red bell pepper between the wraps.
- Season with salt and pepper to taste.
- Roll up the wraps, tucking in the sides as you go.
- Slice each wrap in half and serve immediately. Enjoy!
