  • 1/4 cup of sour cream
  • 1/4 cup of salsa
  • 1 avocado, diced
  • 1 lime, juiced
  • 1/4 teaspoon of cumin
  • 1/4 teaspoon of chili powder
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 350 degrees F.
  • Spread the tortilla chips in a single layer on a large baking sheet.
  • Evenly distribute 1 cup of black beans, 1 cup of diced tomatoes, and 1 cup of diced bell peppers over the tortilla chips.
  • Sprinkle 1 cup of shredded cheddar cheese over the top of the nachos.
  • Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.
  • While the nachos are baking, in a small bowl, mix together 1 diced avocado, the juice of 1 lime, 1/4 teaspoon of cumin, and 1/4 teaspoon of chili powder. Season with salt and pepper to taste.
  • Once the nachos are done, remove them from the oven and sprinkle 1/2 cup of sliced black olives, 1/4 cup of chopped green onions, and 1/4 cup of pickled jalapenos over the top.
  • Drizzle 1/4 cup of sour cream and 1/4 cup of salsa over the nachos.
  • Finally, spoon the avocado mixture over the nachos.
