Instructions

  • Rinse 1 cup of lentils and 1 cup of basmati rice separately under cold water and set aside.
  • In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion is translucent.
  • Add 1 teaspoon of cumin, 1 teaspoon of coriander, 1/2 teaspoon of turmeric, 1/2 teaspoon of cayenne pepper, 1/4 teaspoon of cinnamon, and 1/4 teaspoon of black pepper to the pot. Stir and cook for 1-2 minutes to toast the spices.
  • Add the rinsed lentils and rice to the pot and stir to combine with the spices and onions.
  • Pour in 2 cups of vegetable broth and season with salt to taste. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes, or until the lentils and rice are tender and the liquid is absorbed.
  • Once the pilaf is cooked, fluff it with a fork and let it sit, covered, for 5 minutes to steam.
